This is true. You have to watch prices when ordering from Amazon. They tend to raise prices pretty high but a lot of the time the price come down over time a bit as demand slows a bit.
I guess it comes down to how badly you need a given ingredient I guess.
Supply and demand.
Sadly more often than not there is more demand then there is a supply of various things.
Right now, yes, things like toilet paper, sanitizer, etc.
During normal times, if you have a huge supply that you charge a lot for, you will have that huge supply for a very long time.
There tends to be shortages from time to time for various reasons. During the Obama administration the shortage was on ammo. Everyone was afraid they would pass legislation limiting the purchase, so people went nuts stocking up. I am sure there are lots of people out there will a huge stock pile to this day.
